My father in laws pig cooker.
Otherwise, it is Wilbur's for me.
Like a good steak, great BBQ needs no other additives once off the pig cooker. The chef has their rub while cooking .
With that said, nothing but vinegar if I have to put some on after I pull from the cooker
This is my default strategy when I put a Boston Butt in the smoker. Let the flavor of the meat/smoke shine through.
Exactly...and what time is dinner 🤣🤣

I interned in Lexington one summer while at App and ate Speedy's or Lexington BBQ for lunch at least 3 times a week. Good times.

But I like Texas style brisket best.....sorry, I know I am a disgrace to every other native North Carolinians, and will now see myself out.

No shame. I actually smoked my first brisket a few weeks ago and enjoyed it.

That is all good. Brisket is really good.
Cannot remember the place when we went to A&M game. Had some on the way to Dallas for the day. Recommendation from the hotel

I like brisket — a lot, but like spaghetti, it’s not BBQ.

Lexington style is more like spaghetti than Eastern style.

I’m gonna smoke some ribs on Thurs or Fri. Trying to determine if I’m gonna go use my regular homemade rub or trying something different (Asian-oriented, maybe Hoisin).

A daughter lives in Franklin County and I was there yesterday evening mansplaining how to use a weed trimmer. So we took her out to eat and we went to Johnny's in Louisburg. There Piedmont sauce was pretty good but I use very little sauce on my Q and that is not going to make or break the meal. It was classic eastern style chopped pork shoulder. I'll go back, but there was not any cobbler for sale.

For ease of geographic use I consider the fall line to be the divider between eastern and western BBQ style, though Raleigh/Durham might be on the line with a bit of both.

But where is the cobbler line or did I just get a restaurant that only sold pies and cakes?
This is my very generic signature added to each post.

That’s an old reference, my friend. Pick N Pig has been there forever.
